Shared kitchens need shared cleaning
In a commissary, the next tenant inherits whatever the last one left. A bakery finishes at dawn, a caterer preps through the afternoon and a food truck crew restocks at night. Members clean their own stations, but common lines, floors, drains and walk-ins need a crew that answers to the kitchen, not to any single tenant.
Hayward Janitorial cleans the shared side of the kitchen: common prep lines and stations, walk-in coolers and freezers, the dish area, floors and drains, restrooms and member lockers. Your members get a kitchen that is ready when their booking starts, and the operator gets one plan that keeps the building on a steady standard.
Hayward’s commissary kitchens
Hayward has plenty of rented kitchen space, from hourly-rental commissaries to shared kitchens that serve caterers, bakers and food trucks.
That traffic shows up on the floor. Trucks back up to the doors, carts roll in from the street, and several businesses share the same sinks, coolers and ranges in a day. Our plans are written for that pace.
Prep lines and grease-prone surfaces
Stainless prep tables, undershelves, sinks and the fronts of ranges, combi ovens, griddles and fryers are degreased and wiped, and the wall panels behind the line are washed where splatter builds.
Grease collects fastest in the same places every week: the floor in front of the fryers, around range legs, under shelves and in wall corners. Those spots go on a fixed rotation instead of waiting for a complaint.
Walk-ins, dish areas, floors and drains
Walk-in coolers and freezers get floors mopped, door gaskets, handles and strip curtains wiped, and shelving cleaned in sections members clear ahead of time. The dish area’s three-compartment sinks, splash walls, dish tables and floor are scrubbed, and the truck service area is cleaned of the grit and grease that roll in from the lot.
Floors are machine-scrubbed with degreaser, rinsed and squeegeed to the drains, and drain grates are lifted and cleaned beneath. Quarry tile and sealed concrete stay safer underfoot on a set scrubbing cycle, and our concrete floor cleaning extends that work to loading areas and storage rooms.
Clean changeovers between tenants
Changeovers are where shared kitchens fall behind. Crew visits are slotted into your booking calendar: the common line and floor are cleaned after the morning production block and before the afternoon caterers, or overnight ahead of the early bakers. Dedicated suites can be added on their own schedule when a tenant wants it.
Restrooms, lockers, the member break area and the office are handled during those same trips, with soap, paper and liners refilled from our stock or your supply room. A short visit log shows the manager what was cleaned and when.
Dedicated suites and production rooms
A commissary may rent private production suites alongside the shared line. A suite tenant runs its own schedule, but its floors, drains, walk-in and roll-up door threshold still face the same grease and traffic. Suites can join the plan as their own line item, cleaned on the tenant’s timetable and billed to the operator or the tenant, whichever you prefer.
That keeps the whole building on one standard. Hallways between suites, shared mop rooms and the loading area outside the roll-up doors are scrubbed on the same visits, so dirt from one tenant’s space does not track into the next.
Ready for an inspection any week
Health inspectors look closely at floors, walls, drains, storage and handwashing stations, and a shared kitchen is held to the same standard as a restaurant. Keeping those surfaces on a steady schedule supports inspection readiness all year, and a deeper pass can be booked before a visit you expect.
Your food safety rules lead. Tell us which sanitizers belong near food-contact surfaces and which areas stay off limits, and the crew checklist follows.
Storage rooms, offices and the price
Dry storage cages, ingredient shelving and packaging rooms are swept, mopped and dusted, with every member’s labeled goods left in place. Mop sinks and chemical closets are cleaned and kept in order.
Pricing reflects kitchen size, the number of stations, suites and walk-ins, how many changeovers you want covered and floor and drain work. A walkthrough produces a written quote, and kitchens that also host delivery-only brands can add our ghost kitchen cleaning for pickup areas and fast turnarounds.
A few useful answers
Common questions.
How do you clean a kitchen that is booked most of the day?
We clean in the gaps between bookings or overnight, so common lines, floors and dish areas are done while stations are empty.
Do you sanitize the shared prep tables?
Yes. Common prep tables and sinks are cleaned and sanitized with the products your food safety rules approve.
Do you clean the dedicated suites as well as the shared kitchen?
Yes. Suites can join the plan on their own schedule, separate from the shared kitchen’s changeovers.
Will you clean the food truck parking and service area?
Yes. The truck service area and the floors where carts load and unload are scrubbed on the same plan.
