Following an order through the building
In a delivery-only kitchen, every order takes the same path: ingredients come in the back, get prepped and cooked, are packed and labeled, and leave in a courier’s hands a few minutes later. Dirt follows that path too. Hayward Janitorial cleans each stage in the order the food moves, so nothing between the back door and the pickup shelf gets missed.
Most of the work happens after the last ticket, with shorter resets between rushes. The goal is simple: each brand starts its next service with a line, a packing table and a pickup area that look and work like new.
Ghost kitchens in Hayward
Hayward has its own delivery-only kitchens, from private-unit facilities to commissaries set up for app pickups.
A facility of small private units, a shared commissary line or a restaurant kitchen running extra brands each needs a slightly different plan, and we write it around your layout.
Receiving, walk-ins and dry storage
The back door takes produce, protein and paper deliveries all day. Thresholds, handles and the floor just inside are scrubbed so street grit stays at the door. Walk-in coolers and freezers have floors mopped, gaskets, handles and strip curtains wiped, and shelving cleaned one section at a time.
Dry storage is swept and dusted, and broken-down cardboard goes to recycling instead of piling up in corners where pests like to settle.
Prep tables and the cook line
Cutting stations, prep sinks and reach-in coolers are wiped down, and the cook line is degreased from the wall panel to the floor: range and fryer fronts, flat-top edges, shelving and under-counter spaces where lids and dropped food collect.
Under the line, floors are scrubbed with degreaser, rinsed toward the drains and squeegeed dry. Drain grates and trench covers are pulled and cleaned underneath.
Packing, labels and the courier hand-off
Packing tables, bag racks, heat shelves and printer stations are cleaned and cleared of stray stickers, sauce cups and bag scraps. Packaging stock is straightened so the next shift can grab what it needs without digging.
Couriers meet your brands at the pickup shelf, so that area gets close attention. Order cubbies, shelf edges, door glass, handles and check-in screens are cleaned and disinfected, mats are vacuumed and shaken out, and the bin by the door is emptied. Between rushes, our day porter service keeps the hand-off area tidy while orders keep moving.
Overnight resets for multi-brand sites
After the last delivery leaves, the night crew resets the whole kitchen: lines, packing areas, storage, staff restroom and break space. In a facility of private units, each unit is cleaned on its own checklist and logged separately, so the operator can show each brand partner exactly what was done.
Brands that also cook in a commissary can pair this plan with our shared kitchen cleaning, so prep space and delivery space stay on the same standard.
Inspection-ready for the county and your partners
Health inspectors look at the same things a brand partner’s auditor does: floor condition, drains, wall surfaces near the line, storage and handwashing stations. Keeping those surfaces on a steady rotation supports inspection readiness every week instead of a scramble before a visit, and a deeper pass can be booked ahead of an inspection you expect.
Your food safety rules lead the work. Tell us which sanitizers belong near food-contact surfaces and which units are off limits during service, and the checklist follows.
Trash, grease and price
Delivery kitchens throw out more film, cardboard and sauce cups than most restaurants. Station bins are emptied and relined, trash corrals are swept and hosed, and the grease bin pad is washed so nothing draws pests to the building.
Price is based on the kitchen’s size, the number of brands or units, overnight and between-rush visit counts and floor and drain work. A walkthrough during a slow hour leads to a written quote.
A few useful answers
Common questions.
Can you reset the kitchen between the lunch and dinner rush?
Yes. A short visit between rushes covers floors, packing tables and the courier pickup area.
How do you track cleaning for each brand unit?
Each unit is cleaned on its own checklist and logged separately, so the operator can share the record with brand partners.
Which parts of the courier area get disinfected?
Order cubbies, shelf edges, door handles, glass and check-in screens are disinfected on every visit.
When does the main clean happen in a delivery kitchen?
After the last order of the night leaves, so the full reset never collides with service.
